Description

This comforting potsticker soup combines tender dumplings with a flavorful ginger-garlic broth, enhanced by mushrooms, spinach, and aromatic seasonings. Perfect as a quick and satisfying meal, it’s adaptable for vegetarians and offers a delightful balance of savory and fresh flavors.

Ingredients

Scale

Soup Base

  • 4 cups chicken broth (or vegetable broth for vegetarian option)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 1 tablespoon rice vinegar (optional)
  • Salt and pepper to taste
  • 1 teaspoon chili oil or red pepper flakes (optional)

Potstickers and Vegetables

  • 1215 frozen potstickers (store-bought or homemade)
  • 1/2 cup sliced mushrooms
  • 1/2 cup spinach or bok choy
  • 23 green onions, chopped (for garnish)

Instructions

  1. Prepare the Broth: Heat the sesame oil in a large pot over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until aromatic and just beginning to soften. Pour in the chicken or vegetable broth, soy sauce, and, if using, rice vinegar. Bring to a gentle simmer and cook for 5–10 minutes so the flavors meld nicely.
  2. Cook the Potstickers and Vegetables: Carefully add the frozen potstickers to the simmering broth. Let them cook for 5–7 minutes until fully heated through and tender. In the last 2–3 minutes, stir in the sliced mushrooms and spinach or bok choy to allow them to soften and blend with the soup.
  3. Season the Soup: Taste the broth and adjust the seasoning with salt, pepper, and chili oil or red pepper flakes if you’d like some heat. Once the flavors are to your preference, remove the pot from the heat.
  4. Serve and Garnish: Ladle the hot soup into bowls, ensuring each serving contains a generous mix of broth, dumplings, and vegetables. Top with chopped green onions and an additional drizzle of sesame oil if desired, to enhance aroma and richness.

Notes

  • Use vegetable broth instead of chicken broth to keep this recipe fully vegetarian.
  • Homemade potstickers can be substituted for store-bought for a fresher taste.
  • Adjust the amount of chili oil or red pepper flakes to your preferred spice level.
  • Spinach can be replaced with bok choy or other leafy greens for variety.
  • For a gluten-free version, ensure your soy sauce and potstickers are gluten-free.
