For the Patties:
- 12 oz (340g) ground beef (80/20)

Burger Sauce:
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1–2 tablespoons ketchup
- 1 tablespoon mustard
- Freshly cracked black pepper, to taste
The Toppings:
- Brioche buns
- 2 slices cheddar cheese
- Pickles
- Lettuce
- Onion, thinly sliced
- Tomato slices
Instructions
- Prepare the Patties: Divide the ground beef into 3 oz (85g) portions. Roll each portion into a ball. Place each ball between two sheets of parchment paper, then use the flat side of a mallet to press and flatten them into thin rounds.
- Make the Burger Sauce: In a bowl, combine mayonnaise, sour cream, ketchup, mustard, and freshly cracked black pepper. Mix well and refrigerate until ready to use to let the flavors meld.
- Cook the Patties: Heat a cast iron skillet or griddle over medium-high heat until very hot. Season one side of each patty with salt and black pepper. Place the seasoned side down on the skillet and season the top side as well. Cook for 1-2 minutes until the edges are crispy and browned. Flip the patties and cook for 30 seconds to a minute more. Place a slice of cheddar cheese on one patty, then place the other patty on top to create a double-stacked burger. Remove from heat.
- Toast the Buns: Lightly toast the brioche buns on the grill or skillet for about 30 seconds until golden and slightly crisp.
- Assemble the Burgers: Spread a spoonful of the prepared sauce on the bottom bun. Top with lettuce, tomato slices, and thinly sliced onion. Add the double-stacked patties on top, then layer pickles over the meat. Add more sauce on top of the pickles, and finish with the top bun. Serve immediately for the best taste.
