  • Diet: Vegetarian

Description

A refreshing and nutritious Strawberry Chia Pudding made with fresh strawberries, creamy strawberry Greek yogurt, and chia seeds. This easy no-cook recipe blends the ingredients to a smooth consistency and thickens in the fridge for a perfect make-ahead breakfast or snack. Naturally sweetened with maple syrup and optionally enriched with almond butter, it offers a deliciously creamy texture topped with your choice of whipped cream or toppings.

Ingredients

Scale

Base Ingredients

  • 16 oz fresh strawberries, stems removed and halved
  • 1 1/2 cups unsweetened vanilla almond milk (or milk of choice)
  • 1 (5.3 oz) container strawberry Greek yogurt
  • 1 tsp vanilla extract

Thickener & Sweetener

  • 1/2 cup chia seeds
  • 5 tsp pure maple syrup

Optional Ingredients

  • 1 tbsp almond butter
  • Whipped cream for topping
  • Cacao nibs, chocolate chips, coconut flakes, or extra almond butter for garnish

Instructions

  1. Blend the Fruit and Dairy: Place the sliced strawberries, almond milk, strawberry Greek yogurt, vanilla extract, and optional almond butter into a blender. Blend on high until the mixture is completely smooth and creamy.
  2. Combine with Chia Seeds: Pour the blended mixture into a large mixing bowl. Add the chia seeds and whisk thoroughly until fully combined and smooth. Adjust sweetness by tasting and adding maple syrup as preferred; 4 tsp works well for balanced sweetness. Let the mixture sit for 15 minutes to begin thickening.
  3. Re-whisk and Refrigerate: After 15 minutes, whisk again to break up any clumps. Cover the pudding and refrigerate for at least 4 hours or overnight to allow the chia seeds to fully absorb the liquid and create a thick, pudding-like texture.
  4. Serve and Garnish: Enjoy the chilled pudding straight from the fridge, topped with whipped cream and optional garnishes such as cacao nibs, chocolate chips, shredded coconut, or a drizzle of almond butter for extra flavor and texture.

Notes

  • For a smoother texture, you can blend the chia seeds with the other ingredients instead of whisking them in.
  • The pudding thickens more as it sits; if it becomes too thick, stir in a splash of almond milk before serving.
  • Use fresh strawberries for the best flavor, or substitute frozen strawberries if fresh are not available (thaw before blending).
  • This recipe can be made vegan by substituting Greek yogurt with a plant-based yogurt alternative.
  • Make sure to stir well after chilling to break up any gelatinous chia clumps before serving.
