Instructions
- Blend the Fruit and Dairy: Place the sliced strawberries, almond milk, strawberry Greek yogurt, vanilla extract, and optional almond butter into a blender. Blend on high until the mixture is completely smooth and creamy.
- Combine with Chia Seeds: Pour the blended mixture into a large mixing bowl. Add the chia seeds and whisk thoroughly until fully combined and smooth. Adjust sweetness by tasting and adding maple syrup as preferred; 4 tsp works well for balanced sweetness. Let the mixture sit for 15 minutes to begin thickening.
- Re-whisk and Refrigerate: After 15 minutes, whisk again to break up any clumps. Cover the pudding and refrigerate for at least 4 hours or overnight to allow the chia seeds to fully absorb the liquid and create a thick, pudding-like texture.
