Instructions

  1. Prepare the Ribeye: Cube the ribeye into 1×1 inch pieces and place them in a bowl. Coat the steak cubes with 1 tablespoon of avocado oil, then season evenly with 1 tablespoon of your favorite steak seasoning to enhance the flavor.
  2. Season the Shrimp: Cut the shrimp into thirds and season thoroughly with ½ tablespoon of Cajun seasoning, ensuring the shrimp are well-coated for a spicy kick.
  3. Combine Queso Ingredients: In a cast iron skillet, add 8 oz of cubed pepper jack cheese, 16 oz of Queso Blanco cheese, 1 can of Rotel tomatoes (including liquids), 6 oz of diced green chilies, the diced and sautéed onion from earlier, and 1 cup of milk. Stir to combine all ingredients evenly.
  4. Bake the Queso: Place the skillet in a preheated oven at 350°F (175°C) and bake for 20 minutes, stirring the mixture every 10 minutes to ensure the cheese melts evenly and the dip becomes creamy and smooth.
  5. Cook Steak and Shrimp: While the queso bakes, cook the seasoned ribeye cubes and cut-up shrimp separately on a griddle or stovetop pan over medium-high heat. Cook until both steak and shrimp are fully cooked through and nicely browned, about 4-5 minutes for shrimp and 6-8 minutes for steak depending on thickness.
  6. Assemble and Serve: Once the queso is creamy and bubbly, remove it from the oven and top the dip with the cooked steak cubes and shrimp. Serve immediately warm with your favorite dipping chips and enjoy the rich, spicy flavors.
