Chicken and Vegetables
- 650 g (1.5 lb) Chicken breast
- 1 Red pepper (capsicum), deseeded and cut into wedges
- 1 Yellow pepper (capsicum), deseeded and cut into wedges
- 1 Green pepper (capsicum), deseeded and cut into wedges
- 2 Large onions, peeled and cut into wedges
- 2 tsp Oil
Fajitas Seasoning
- 1 tsp Chili powder
- 1 tsp Ground cumin
- 2 tsp Paprika
- 1/4 tsp Cayenne pepper
- 1/2 tsp Garlic powder
- 1 tsp Sea salt
- 1 tsp Ground black pepper
Instructions
- Prepare ingredients: Deseed and cut the red, yellow, and green peppers into wedges. Peel and cut the onions into wedges. Measure out the oil and all the spices for the fajita seasoning.
- Add to slow cooker: Place the chicken breasts, all the prepared peppers, onions, oil, and the fajita seasoning (or 4 tbsp ready-made fajita seasoning if preferred) into the slow cooker. Mix gently to combine.
- Cook the fajitas: Cook on HIGH for 3 hours or LOW for 5-6 hours. This slow cooking will tenderize the chicken and allow the flavors from the seasoning and vegetables to meld beautifully.
- Check doneness: Ensure the chicken is cooked through before serving. Use a knife to check that the thickest part of the chicken is no longer pink inside.
- Slice chicken and mix: Remove the chicken breasts, slice them, and then add the slices back into the slow cooker with the peppers and onions. Stir to combine.
- Adjust liquid (optional): You may want to drain off some of the cooking liquid if it’s too strong in seasoning flavor or makes the mixture too wet for your liking.
- Optional texture adjustment: For peppers with a firmer texture, add the peppers 30 minutes before the cooking time ends rather than at the start, to avoid very soft vegetables.
