Description

This Salisbury Steak Meatballs recipe offers a delicious, low-carb twist on the classic comfort food by using almond flour or mashed potatoes as a binder and coconut aminos for a savory depth of flavor. The meatballs are either broiled or air fried to perfection and topped with a rich, homemade onion gravy that’s thickened with arrowroot or potato starch for a gluten-free option. Perfect for an easy weeknight meal, this dish combines hearty beef with aromatic onions and is both satisfying and flavorful.

Ingredients

Scale

Meatballs

  • 1 pound ground beef
  • 1/2 cup almond flour or mashed potatoes
  • 1 large egg
  • 1 tablespoon minced garlic
  • 1 tablespoon coconut aminos
  • 1 tablespoon dried minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Onion Gravy

  • 1 1/2 teaspoons olive oil
  • 1/4 medium yellow onion, thinly sliced
  • 1 1/2 cups beef broth
  • 1 1/2 tablespoons arrowroot or potato starch
  • 1 tablespoon coconut aminos
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the cooking appliance. Set your oven to broil or preheat an air fryer to 375°F to prepare for cooking the meatballs.
  2. Mix meatball ingredients. In a large bowl, gently combine the ground beef, almond flour or mashed potatoes, egg, minced garlic, coconut aminos, dried minced onion, salt, and black pepper making sure not to overwork the meat.
  3. Form meatballs. Shape the mixture into 20 evenly sized meatballs for consistent cooking.
  4. Cook meatballs. If broiling, place the meatballs on a broiler-safe pan and broil for 10 minutes, then flip and broil for an additional 3 minutes. If using an air fryer, cook meatballs for 8 to 10 minutes until cooked through and browned.
  5. Sauté onions. Heat olive oil in a skillet over medium heat, add the sliced onions, and cook until they soften and become translucent, about 5-7 minutes.
  6. Prepare gravy. Whisk together the beef broth, arrowroot or potato starch, coconut aminos, garlic powder, salt, and black pepper in a bowl. Pour the mixture into the skillet with the onions.
  7. Thicken gravy. Cook the mixture while whisking frequently until the gravy thickens, which should take about 3-5 minutes.
  8. Serve. Pour the rich onion gravy over the cooked meatballs and serve immediately while hot.

Notes

  • You can choose almond flour for a lower-carb option or mashed potatoes if you prefer a softer texture in the meatballs.
  • Arrowroot or potato starch works well as a gluten-free thickening agent in the gravy.
  • Adjust salt and pepper to your taste preference.
  • For extra flavor, feel free to add fresh herbs like parsley or thyme to the meatball mixture.
  • If you do not have coconut aminos, you can substitute with low-sodium soy sauce or tamari.
