Ingredients
Scale
Vegetables
- 8 medium carrots (about 1 lb, peeled and sliced in half, then cut into 2-inch sticks)
- 1 lb broccoli florets (chopped)
Seasonings
- 2 Tablespoons olive oil
- 1/2 teaspoon salt
- Fresh cracked black pepper to taste
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/4 teaspoon red chili flakes
Toppings (optional)
- 1/3 cup grated Parmesan cheese
- Fresh chopped parsley
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough for roasting the vegetables to a nice caramelized finish.
- Prepare the vegetables: Peel and cut the carrots into half-lengths and then into 2-inch sticks. Chop the broccoli into florets. Place both vegetables evenly on a large-rimmed sheet pan.
- Season the vegetables: Drizzle the olive oil over the carrots and broccoli. In a small bowl, combine salt, fresh cracked black pepper, Italian seasoning, garlic powder, and red chili flakes. Sprinkle this seasoning mixture evenly over the vegetables. Toss everything to coat well with olive oil and seasoning.
- Roast in the oven: Place the sheet pan in the preheated oven and roast for 25 to 30 minutes. About halfway through cooking, flip the vegetables to promote even roasting. Roast until the carrots are tender and both vegetables show golden caramelization on their bottoms.
- Add toppings and serve: Remove the roasted vegetables from the oven. While still hot, sprinkle the grated Parmesan cheese over the vegetables. Finish with a scattering of fresh chopped parsley. Serve warm as a delicious side dish.
Notes
- Ensure vegetables are cut evenly for uniform roasting.
- Parmesan cheese is optional but adds a savory touch.
- You can adjust red chili flakes to your preferred spice level.
- Flipping halfway helps to achieve even caramelization.
- Use fresh parsley for best flavor and garnish appeal.
