Description

This vibrant Red Chimichurri sauce is a flavorful Argentine-inspired condiment made with roasted red peppers, fresh parsley, and a blend of aromatic spices. Perfect as a zesty accompaniment to grilled meats, chicken, seafood, or roasted vegetables, this recipe combines tangy red wine vinegar and lemon juice with smoky paprika and garlic, balanced by the smooth richness of olive oil. Quick and easy to prepare using a blender, it’s ideal for adding a punch of color and flavor to your meals.

Ingredients

Scale

Chimichurri Sauce

  • 1 cup roasted red peppers, chopped
  • 1/2 cup packed fresh parsley
  • 1/4 cup red wine vinegar
  • 2 teaspoons smoked paprika
  • 5 garlic cloves, peeled
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 cup good quality olive oil

Instructions

  1. Combine ingredients: Add the roasted red peppers, parsley, red wine vinegar, smoked paprika, garlic cloves, lemon juice, black pepper, salt, and crushed red pepper flakes into a blender. Pulse the ingredients several times until they are well combined but still retain some texture.
  2. Incorporate olive oil: Pour the blended mixture into a bowl and stir in the olive oil. The chimichurri can be slightly chunky, which adds to its rustic texture and flavor.
  3. Serve: Use the red chimichurri as a sauce or marinade to complement grilled or cooked meats, chicken, seafood, or vegetables. It can also be served on the side as a flavorful dressing or dip.

Notes

  • Use good quality roasted red peppers or roast your own for the best flavor.
  • Adjust the crushed red pepper flakes to control the spice level.
  • This sauce can be stored in an airtight container in the refrigerator for up to 5 days.
  • Allow flavors to meld by letting the sauce sit for at least 30 minutes before serving.
  • Chimichurri is best served at room temperature.
