  • 23 tablespoons olive oil

Instructions

  1. Blend Tahini and Lemon Juice: Add tahini and lemon juice to a food processor and blend until smooth and creamy. Add water as needed to reach a smooth, creamy texture.
  2. Add Spices and Garlic: Add salt, cumin, and garlic (fresh cloves or seasoning) to the processor and blend again until fully incorporated and smooth.
  3. Incorporate Chickpeas and Olive Oil: Add the drained chickpeas and olive oil to the mixture. Blend until smooth and creamy. Adjust the texture by adding small amounts of water if needed, and taste to adjust seasoning.
  4. Plate and Garnish: Transfer the hummus to a serving dish. Drizzle additional olive oil on top, then sprinkle with sumac or paprika and chopped parsley. Serve with fresh carrot sticks, cucumber slices, and crackers for dipping.
