These Oven-Baked Cabbage Burgers offer a delicious low-carb alternative to traditional burgers by using roasted cabbage slices as the base. Lean ground beef patties are seasoned with fresh garlic, herbs, and spices, then topped with tomato sauce and melted cheese. Baked to perfection, these burgers deliver a flavorful, hearty meal with a satisfying combination of textures and wholesome ingredients.

Ingredients

Scale

For the Cabbage

  • 1 head of green cabbage, cut into 1-inch slices
  • Oil, for brushing
  • Salt and black pepper, to taste

For the Beef Patties

  • 1 pound lean ground beef
  • 1 teaspoon grated garlic
  • 1/2 cup chopped green onion
  • 1/2 cup chopped parsley
  • 1/2 teaspoon red chili pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup shredded cheese (mozzarella or Monterey Jack)

Topping and Assembly

  • 1/2 cup tomato sauce or ketchup
  • 1/4 cup shredded cheese (mozzarella or Monterey Jack)
  • Fresh herbs (optional), for garnish

Instructions

  1. Preheat and Prepare Cabbage: Preheat your oven to 400ºF (200ºC). Arrange the cabbage slices on a rimmed baking sheet. Lightly brush each slice with oil and season with salt and pepper to taste.
  2. Roast Cabbage Slices: Roast the cabbage slices in the preheated oven for about 10 minutes. This step partially cooks the cabbage to prevent it from becoming too soft when baked later with the beef patties.
  3. Mix and Form Beef Patties: While the cabbage is roasting, place the lean ground beef in a large bowl. Add the grated garlic, chopped green onion, parsley, red chili pepper flakes, half the shredded cheese, salt, and pepper. Mix well until all ingredients are evenly combined. Divide the mixture into four equal portions and form beef patties.
  4. Assemble Burgers: Remove the roasted cabbage slices from the oven. Spread about a tablespoon of tomato sauce evenly over each slice. Sprinkle a little shredded cheese on top of the sauce, then place a beef patty on each. Top the patties with the remaining shredded cheese.
  5. Bake the Cabbage Burgers: Return the assembled cabbage burgers to the oven and bake for 10 to 12 minutes, or until the beef is cooked through to your preference and the cheese is melted and bubbly.
  6. Serve: Once done, sprinkle with additional fresh herbs if desired. Serve immediately and enjoy your flavorful oven-baked cabbage burgers.

Notes

  • Feel free to swap ground beef for ground turkey or chicken for a leaner option.
  • Adjust red chili pepper flakes to control the heat level according to your taste.
  • You can use your preferred cheese type, but mozzarella or Monterey Jack melts well for this recipe.
  • Ensure cabbage slices are evenly cut to cook consistently.
  • Serve with a side salad or roasted vegetables for a complete low-carb meal.
