  3. Make the dough: Remove the saucepan from heat and quickly stir in the all-purpose flour and salt until a thick dough forms that pulls away from the sides of the pan.
  4. Cool slightly and add eggs: Allow the dough to cool for about 5 minutes. Then, beat in the eggs one at a time until the dough becomes smooth and glossy.
  5. Sweeten the dough: Stir in sugar if you’re using it to add a touch of sweetness.
  6. Fill muffin cups: Spoon the dough into the greased muffin cups, filling each about halfway to allow room for puffing.
  7. Bake: Place the muffin tin in the oven and bake for 30 to 35 minutes until the puffs are risen, golden brown, and set.
