- Prepare syrup mixture: Combine sugar, corn syrup, and butter in a small saucepan and melt together over medium-low heat until the sugar dissolves. Be careful not to let the mixture boil to avoid burning the sugar.
- Add peanut butter: Remove the saucepan from heat and stir in the creamy peanut butter until fully incorporated and smooth.
- Mix with cornflakes: Pour the peanut butter mixture over the cornflakes in a mixing bowl. Gently fold to combine, being careful not to crush the cornflakes to preserve their crunch.
- Shape cookies: Line a cookie sheet or counter with parchment paper. Using a 1.5 to 2 tablespoon cookie scoop, portion out cookie balls onto the parchment, pressing lightly to hold shape if needed.
- Cool and set: Let the cookie balls cool completely at room temperature until firm and set before serving.
