Nacho Egg Rolls Recipe

  • Author: Simon
  • Total Time: 30 minutes
  • Yield: 6-7 egg rolls 1x

Description

These Nacho Egg Rolls are a delicious twist on classic egg rolls, stuffed with seasoned ground beef, bell peppers, olives, onions, and cheddar cheese, then deep-fried until golden and crispy. Perfect as a savory appetizer or snack, they pair wonderfully with sour cream, ranch, or cheese dip for extra flavor.

Ingredients

Scale

Meat Mixture

  • 1 lb Lean Ground Beef
  • ¼ cup Red Bell Peppers, diced
  • ¼ cup Green Bell Peppers, diced
  • ⅓ cup Black Olives, chopped
  • ⅓ cup Red Onions, finely chopped

Cheese

  • ½ cup Shredded Cheddar Cheese
  • Cheese Sauce (quantity as desired)

Assembly and Frying

  • 1 package Egg Roll Wraps (67 wraps)
  • Canola Oil, enough for deep frying
  • Sour Cream, Ranch, or Cheese Dip for serving

Instructions

  1. Prepare the Ground Beef: In a large mixing bowl, combine the lean ground beef and seasonings, mixing thoroughly to ensure the meat is fully combined and broken up.
  2. Cook the Beef: Heat a large skillet over medium-high heat and add the seasoned ground beef. Cook for 7-8 minutes, stirring frequently, until the beef is fully browned. Drain excess grease by pouring it into the sink or trash.
  3. Add Vegetables: Add the diced green bell peppers and finely chopped onions to the skillet. Cook for an additional 2 minutes until the onions become translucent with slight browning.
  4. Cool the Mixture: Transfer the beef and vegetable mixture to a bowl and place it in the refrigerator for 10 minutes to cool. Avoid leaving it longer to prevent drying out.
  5. Heat Oil: Heat canola oil in a deep pot or fryer to 350°F (177°C), preparing for frying the egg rolls.
  6. Assemble Egg Rolls: Lay out the egg roll wraps into a triangle shape with one pointed edge facing you. Spoon a portion of the cooled beef mixture onto the wrap, then sprinkle black olives, additional vegetables, and top with cheese sauce and shredded cheddar cheese.
  7. Roll the Egg Rolls: Fold the pointed edge nearest to you over the filling just past the tip, then secure it with a dab of water. Fold the sides inward, continue to roll tightly, and seal the final edge with water to close.
  8. Fry Egg Rolls: Carefully place the assembled egg rolls into the hot oil, frying for 2-3 minutes or until they turn golden brown. Fry in batches to avoid overcrowding and uneven cooking.
  9. Drain and Serve: Remove the egg rolls and place them on paper towels to absorb excess oil. Serve hot with sour cream, ranch, or cheese dip and enjoy!

Notes

  • Ensure ground beef is fully thawed before cooking for even browning.
  • Do not overcrowd the fryer to maintain oil temperature and crispiness.
  • Use any shredded cheese of your preference for varied flavors.
  • Cool the filling before rolling to prevent egg roll wrappers from tearing.
  • Store leftover egg rolls in the refrigerator and reheat in an oven or air fryer for best texture.
