Ingredients
Scale
Vegetables
- 1 cucumber, diced
- 2 to 3 medium tomatoes, diced
- 1/2 red onion, thinly diced
Herbs
- 2 tablespoons chopped cilantro (and/or mint, basil, parsley, dill)
Dressing
- 3 tablespoons extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1/4 teaspoon salt
- Fresh cracked pepper, to taste
Instructions
- Prepare the vegetables: Dice the cucumbers, tomatoes, and red onion into small cubes. To mellow the bite of the red onion, soak the diced onion in water for 10 minutes, then drain.
- Combine the ingredients: In a large salad bowl, add the diced cucumbers, tomatoes, red onion, and chopped cilantro. Pour over the extra virgin olive oil and freshly squeezed lemon juice.
- Season and toss: Add salt and fresh cracked pepper to taste. Mix the salad thoroughly to ensure the dressing coats all the ingredients evenly.
- Rest before serving: Let the salad sit at room temperature or lightly chilled for 10 to 15 minutes to allow the flavors to meld. Serve and enjoy this refreshing Mediterranean salad.
Notes
- Soaking red onion in water reduces its pungency and makes it more palatable.
- Feel free to substitute cilantro with other herbs like mint, basil, parsley, or dill depending on your preference.
- This salad is best served fresh but can be stored in the refrigerator for up to 1 day.
- Adjust salt and lemon juice to taste to balance the flavors.
