  • Author: Simon
  • Total Time: 25 minutes
  • Yield: About 8 fritters (serves 4) 1x
  • Diet: Vegetarian

Description

These Mediterranean Corn Fritters are golden, crispy, and bursting with fresh flavors like feta, mint, and lemon zest. Perfect as a savory snack or appetizer, they combine the natural sweetness of corn with smoky paprika and creamy Greek yogurt for a delightful bite.

Ingredients

Scale

Fritter Batter

  • 2 large eggs
  • ½ cup Greek yogurt
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Black pepper, to taste
  • 1 teaspoon smoked paprika (or ground cumin, or both)

Add-ins

  • 2 cups corn kernels (fresh, canned drained, or frozen thawed)
  • ½ cup crumbled feta cheese
  • 1 green onion, thinly sliced
  • ¼ cup fresh mint, chopped (substitute dried oregano or dill)
  • Zest of 1 lemon

For Cooking

  • 2 tablespoons olive oil (plus more if needed)

Instructions

  1. Make the Batter: In a large bowl, whisk together 2 large eggs and ½ cup Greek yogurt until smooth. Add ½ cup all-purpose flour, 1 teaspoon baking powder, ½ teaspoon salt, black pepper to taste, and 1 teaspoon smoked paprika. Stir gently until just combined to avoid overmixing.
  2. Fold in the Good Stuff: Carefully fold in 2 cups corn kernels, ½ cup crumbled feta cheese, sliced green onion, chopped fresh mint, and the zest of 1 lemon. The mixture will be thick with lots of texture from the corn and cheese.
  3. Cook the Fritters: Heat 2 tablespoons olive oil in a non-stick skillet over medium heat. Using a ¼ cup measure, scoop the batter onto the skillet and gently flatten each fritter slightly with the back of the spoon. Cook for 2 to 3 minutes on each side, until the fritters are golden brown and crispy.
  4. Serve: Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Serve warm or at room temperature with herbed Greek yogurt, a tomato salad, or your favorite dipping sauce for a flavorful Mediterranean-inspired snack or side dish.

Notes

  • Make sure not to overmix the batter to keep the fritters light and tender.
  • You can use fresh, canned, or frozen corn kernels based on availability.
  • Add extra olive oil to the pan as needed to prevent sticking.
  • These fritters can be made ahead and reheated in a skillet or oven for crispness.
  • For a spicier twist, add a pinch of cayenne pepper or chopped chili to the batter.
