Lobster Tails

  • 1/8 tsp freshly cracked black pepper
  • 1 1/2 Tbsp olive oil
  • 1 1/2 Tbsp fresh lemon juice

Butter

  • 4 Tbsp unsalted butter (divided)

Instructions

  1. Prepare and Butterfly Lobster Tails: Use kitchen scissors to cut through the top shell of the lobster tail, stopping at the base and snipping through the top portion of the meat. Flip the tail to the back side and crack the ribs to open the shell. Carefully open the shell and loosen the meat from it, removing the vein if present. Lift the meat, keeping it attached at the base, and press the shell back so the meat sits on top.
  2. Preheat Oven for Broiling: Place the oven rack in the upper third or center so lobster tails will be about 6 inches from the broiler element. Preheat oven to broil on high heat.
  3. Make Marinade Sauce: In a small bowl, combine 1 Tbsp parsley, pressed garlic, Dijon mustard, salt, black pepper, olive oil, and lemon juice. Stir well to blend.
  4. Arrange Lobster Tails: Place butterflied lobster tails in a roasting pan (9×13 or 8×12). Evenly divide the marinade over each lobster tail. Dot each tail with 1/2 Tbsp of the butter cut into pieces.
  5. Broil Lobster Tails: Broil on high for 10-11 minutes, or until the lobster meat is opaque, white, and registers 145˚F on an instant-read thermometer.
  6. Prepare Garlic Lemon Butter Sauce: Drain drippings from the roasting pan into a saucepan. Add remaining 2 Tbsp butter and gently bring to a simmer, then remove from heat. Pour over lobster tails or serve as dipping sauce.
  7. Serve and Garnish: Transfer lobster tails to a serving platter, garnish with additional parsley if desired, and serve immediately with the garlic lemon butter sauce.
