Description

This Leftover Turkey Noodle Casserole is a comforting and hearty dish that transforms leftover cooked turkey, egg noodles, and mixed vegetables into a creamy, cheesy baked meal. Combining savory herbs and a creamy sauce made from cream of chicken soup and sour cream, this casserole is perfect for a cozy family dinner or using up holiday turkey leftovers.

Ingredients

Scale

Dry Ingredients

  • 4 cups (8 oz.) uncooked egg noodles
  • 1 1/4 teaspoons dried thyme
  • 1/2 teaspoon dried sage
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Protein and Vegetables

  • 3 cups chopped leftover cooked turkey
  • 1 (12 oz.) package frozen mixed vegetables, thawed and warmed

Dairy and Sauce

  • 1 (10.5 oz.) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1/3 cup milk
  • 1/4 cup shredded or grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese, divided

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package directions until al dente. Drain the noodles well and set aside.
  2. Prepare the sauce and mix: In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, milk, dried thyme, dried sage, salt, pepper, Parmesan cheese, and 1 cup of shredded mozzarella cheese. Stir until the mixture is well blended. Add the chopped leftover cooked turkey and thawed mixed vegetables to the bowl, mixing to evenly incorporate all ingredients. Then add the hot, drained noodles and stir gently to combine everything thoroughly.
  3. Assemble the casserole: Grease a 2-quart baking dish with butter or cooking spray. Spoon the noodle and turkey mixture evenly into the dish. Sprinkle the remaining 1/2 cup of shredded mozzarella cheese evenly on top to create a cheesy crust once baked.
  4. Bake the casserole: Preheat your oven to 350°F (175°C). Place the casserole dish in the oven and bake for 25 to 30 minutes, or until the casserole is heated through and the cheese on top is melted and bubbly.

Notes

  • Use any combination of leftover cooked turkey for convenience and flavor.
  • Feel free to substitute mixed vegetables with fresh vegetables like peas, carrots, and corn if preferred.
  • For a lower-fat version, substitute sour cream with Greek yogurt and use reduced-fat cheese.
  • Ensure the noodles are not overcooked to avoid mushy texture in the casserole.
  • This casserole can be assembled ahead of time and refrigerated before baking; just add a few extra minutes to the baking time if baking cold.
