  • 3 Cloves Garlic, minced
  • 3 Tbs Honey

Fats and Oils

  • 2 Tbs Olive Oil
  • 4 Tbs Butter

  • Fresh Parsley, for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (204°C) to prepare for roasting the carrots.
  2. Heat oil and butter: In a large skillet, warm 2 tablespoons olive oil and 2 tablespoons butter over medium-high heat until melted and hot.
  3. Sauté carrots with seasoning: Add the cut carrots to the skillet and season with salt, pepper, garlic powder, and dried thyme. Toss to coat evenly and sauté, stirring frequently, for about 5-7 minutes until carrots begin to soften.
  4. Add garlic and honey: Stir in the minced fresh garlic and drizzle the carrots with honey. Continue sautéing for an additional 1 minute to meld flavors.
  5. Transfer to baking dish: Move the sautéed carrots into a baking dish. Dot the remaining 2 tablespoons of butter over the carrots in small pads.
  6. Roast carrots: Place the baking dish on the center oven rack and roast for about 30 minutes, or until the carrots are tender and caramelized.
  7. Garnish and serve: Remove from the oven, garnish with fresh parsley if desired, serve warm, and enjoy your honey roasted carrots!
