Instructions
- Preheat the oven: Preheat your oven to 400°F (204°C) to prepare for roasting the carrots.
- Heat oil and butter: In a large skillet, warm 2 tablespoons olive oil and 2 tablespoons butter over medium-high heat until melted and hot.
- Sauté carrots with seasoning: Add the cut carrots to the skillet and season with salt, pepper, garlic powder, and dried thyme. Toss to coat evenly and sauté, stirring frequently, for about 5-7 minutes until carrots begin to soften.
- Add garlic and honey: Stir in the minced fresh garlic and drizzle the carrots with honey. Continue sautéing for an additional 1 minute to meld flavors.
- Transfer to baking dish: Move the sautéed carrots into a baking dish. Dot the remaining 2 tablespoons of butter over the carrots in small pads.
- Roast carrots: Place the baking dish on the center oven rack and roast for about 30 minutes, or until the carrots are tender and caramelized.
- Garnish and serve: Remove from the oven, garnish with fresh parsley if desired, serve warm, and enjoy your honey roasted carrots!
