Ingredients
Scale
Dry Ingredients
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
Wet Ingredients
- ¾ cup Greek yogurt (Skyr or blended cottage cheese work too)
- 1 large egg
- ¼ cup maple syrup
Fruits
- ⅓ cup mixed berries (fresh or frozen)
Instructions
- Preheat the oven: Preheat your oven to 350℉ (175℃) and prepare a loaf pan by spraying it with cooking spray to prevent sticking. Set it aside.
- Mix dry and wet ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and kosher salt. Then add the Greek yogurt, egg, and maple syrup. Stir well until all ingredients are fully incorporated, making sure to scrape down the sides of the bowl for an even batter.
- Transfer batter to pan: Pour the prepared batter into the sprayed loaf pan, spreading it evenly. Top the batter with the mixed berries, distributing them over the surface.
- Bake the buns: Place the pan into the preheated oven and bake at 350℉ for about 20 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean with no wet batter.
- Serve: Once baked, remove the loaf from the oven. Drizzle additional maple syrup on top if desired and serve warm for a delightful treat.
Notes
- Use fresh or frozen mixed berries; if frozen, no need to thaw before adding to the batter.
- Substituting Greek yogurt with Skyr or blended cottage cheese will maintain protein content while changing texture slightly.
- Ensure the oven is fully preheated for even baking and proper rise.
- These buns are best enjoyed warm but can be stored in an airtight container for up to 2 days.
- Maple syrup drizzle is optional and can be adjusted based on sweetness preference.
