Instructions

  1. Preheat Oven: Set the oven temperature to 400 degrees Fahrenheit to prepare for baking the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized pieces, then place them in a large baking dish. Toss with 2 tablespoons of olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper to coat evenly.
  3. Bake Sweet Potatoes: Bake the sweet potato pieces in the preheated oven for 30 minutes until they begin to soften and brown.
  4. Cook Ground Turkey: While the sweet potatoes bake, heat 1 tablespoon olive oil in a pan and brown the ground turkey. Season with 1 teaspoon garlic powder, 1/2 teaspoon rosemary, salt, and pepper as it cooks.
  5. Prepare Zucchini: Chop the zucchini by slicing it and then quartering those slices to prepare for mixing.
