- 2–3 Tbsp chicken broth
- 2 tsp honey
- ½ tsp black pepper
- ½ tsp sea salt (adjust to taste)
- 2 tsp cornstarch
Bang Bang Sauce
- ½ cup mayonnaise
- 3 Tbsp sweet chili sauce
- ½–1 Tbsp sriracha (adjust for spice preference)
- 1 tsp rice vinegar
- 2 tsp honey
Bowl Assembly
- Rice (cooked)
- Shredded carrots
- Sliced cucumbers
- Shelled edamame
- Pickled onions
- Avocado slices
- Shredded cabbage
- Sliced green onion
- Sesame seeds
Instructions
- Prep Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey. Whisk thoroughly until smooth and well blended. Taste and adjust spice by adding more sriracha or sweetness with extra honey or chili sauce. Cover and chill until ready to serve.
- Cook Ground Turkey: Heat sesame oil in a large skillet over medium-high heat until shimmering. Add ground turkey and use a spatula to break it into smaller pieces. Cook, stirring occasionally, until browned and the internal temperature reaches 165°F.
- Simmer Turkey Mixture: Lower heat to medium-low. Add minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt to the skillet. Stir everything together and let simmer for 2-3 minutes.
- Thicken Sauce: Sprinkle cornstarch evenly over the turkey mixture and stir well to combine. Cook for an additional minute to allow the mixture to thicken. Optionally, stir in 2 tablespoons of the prepared bang bang sauce to incorporate its flavor into the meat mixture.
- Assemble Rice Bowls: Arrange cooked rice in bowls and top with shredded carrots, sliced cucumbers, edamame, pickled onions, avocado, shredded cabbage, and the cooked ground turkey mixture. Drizzle generously with bang bang sauce and garnish with sliced green onions and sesame seeds. Serve immediately.
Notes
- Adjust the amount of sriracha in both the turkey mixture and bang bang sauce to control the level of spiciness.
- Use low sodium soy sauce to reduce salt intake if desired.
- For a vegetarian version, substitute ground turkey with crumbled firm tofu or lentils and use a vegan mayo in the bang bang sauce.
- Leftover turkey mixture can be stored in an airtight container in the fridge for up to 3 days.
- Use jasmine or brown rice based on your preference.
- Adding fresh lime juice to the bang bang sauce can brighten the flavor.
