Ingredients

Scale

Meat & Dairy

  • 1 pound ground turkey
  • 1/4 cup grated Parmesan cheese

Vegetables

  • 2 medium zucchinis
  • 1/2 medium onion
  • 2 cloves garlic

Spices & Seasonings

  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes

Other

  • 1 tablespoon olive oil
  • 1/4 cup chicken broth

Instructions

  1. Heat oil: Heat the olive oil in a large skillet over medium heat to prepare for sautéing.
  2. Prepare onion: Peel and finely chop the onion to ensure it cooks evenly and releases flavor.
  3. Sauté onion: Add the chopped onion to the skillet and sauté for about 3-4 minutes until soft and translucent, creating a flavorful base.
  4. Prepare garlic: Peel and mince the garlic cloves finely to maximize flavor infusion.
  5. Add garlic: Stir the minced garlic into the skillet and cook for another 30 seconds until fragrant, careful not to burn it.
  6. Cook turkey: Crumble the ground turkey into the skillet, breaking it up with a spoon, and cook for 6-8 minutes until fully browned with no pink remaining.
  7. Prepare zucchini: While turkey cooks, wash the zucchinis, trim the ends, and cut them lengthwise in half.
  8. Slice zucchini: Slice each zucchini half into 1/4 inch thick half-moon shapes for even cooking.
  9. Add zucchini: Stir the sliced zucchini into the turkey mixture and cook for 4-5 minutes until the zucchini softens slightly but retains some firmness.
  10. Season: Sprinkle dried oregano, salt, black pepper, and crushed red pepper flakes evenly over the mixture to build layers of flavor.
  11. Add broth: Pour chicken broth into the skillet and stir well to combine all ingredients.
  12. Simmer: Reduce heat to low and let the skillet simmer for 3-4 minutes to meld flavors and reduce broth slightly.
  13. Add cheese: Sprinkle grated Parmesan cheese over the mixture and stir until melted, coating the turkey and zucchini evenly.
  14. Adjust seasoning: Taste the dish and add more salt, pepper, or red pepper flakes if desired for preferred seasoning.
  15. Serve: Serve immediately, optionally garnished with extra Parmesan cheese for added flavor and presentation.

Notes

  • Use lean ground turkey for a healthier, lower-fat dish.
  • Adjust crushed red pepper flakes to control the spice level to your preference.
  • If chicken broth is unavailable, vegetable broth can be used as a substitute.

  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop.
