Description
Greek Feta & Cucumber Bite Skewers are a refreshing and easy Mediterranean snack featuring crisp cucumber slices, creamy feta cheese, and briny Kalamata olives. Enhanced with a spicy hot honey drizzle, these bite-sized skewers offer a perfect balance of flavors and textures, ideal for entertaining or light appetizers.
Ingredients
Scale
Skewers
- 1 Persian or seedless cucumber
- 100 g block feta cheese (preferably sheep’s milk)
- 8–10 Kalamata olives
- 8–10 toothpicks or cocktail skewers
Hot Honey Drizzle
- 2 tbsp honey
- 1/2 tsp red chili flakes or hot sauce
Optional Garnishes
- Salt (optional, for cucumber prep)
- Olive oil
- Oregano
- Lemon zest
Instructions
- Prepare the Cucumber: Rinse the cucumber and slice into thick rounds about ½ inch thick. Optionally sprinkle with salt and let them sit for 10 minutes to draw out excess moisture, then blot dry with a paper towel.
- Prepare the Feta: Drain and pat dry the feta cheese block to remove excess moisture. Cut the feta into even cubes roughly the same size as the cucumber slices to ensure balanced bites.
- Assemble the Skewers: Stack one cucumber slice, one feta cube, and one Kalamata olive. Pierce through all three pieces with a toothpick or cocktail skewer to secure each bite.
- Make the Hot Honey Drizzle: Microwave the honey for 10 to 15 seconds until warm, then stir in red chili flakes or hot sauce. Let the mixture rest briefly to meld the flavors before drizzling.
- Serve: Just before serving, drizzle the skewers generously with the hot honey glaze. Optionally, garnish with a light drizzle of olive oil, sprinkle of oregano, or a touch of lemon zest to add brightness and aroma.
Notes
- Salting the cucumber slices helps reduce excess water and prevents soggy bites.
- Choose a firm feta cheese, preferably made from sheep’s milk, for authentic Mediterranean flavor and texture.
- The hot honey drizzle can be customized with more or less chili flakes depending on your spice preference.
- These skewers are best served fresh to maintain cucumber’s crispness and feta’s texture.
- For a vegan option, substitute feta with a plant-based cheese alternative.
