  • 810 Kalamata olives
  • 810 toothpicks or cocktail skewers

Hot Honey Drizzle

  • 2 tbsp honey
  • 1/2 tsp red chili flakes or hot sauce

Optional Garnishes

  • Salt (optional, for cucumber prep)

  • Oregano
  • Lemon zest

Instructions

  1. Prepare the Cucumber: Rinse the cucumber and slice into thick rounds about ½ inch thick. Optionally sprinkle with salt and let them sit for 10 minutes to draw out excess moisture, then blot dry with a paper towel.
  2. Prepare the Feta: Drain and pat dry the feta cheese block to remove excess moisture. Cut the feta into even cubes roughly the same size as the cucumber slices to ensure balanced bites.
  3. Assemble the Skewers: Stack one cucumber slice, one feta cube, and one Kalamata olive. Pierce through all three pieces with a toothpick or cocktail skewer to secure each bite.
  4. Make the Hot Honey Drizzle: Microwave the honey for 10 to 15 seconds until warm, then stir in red chili flakes or hot sauce. Let the mixture rest briefly to meld the flavors before drizzling.
  5. Serve: Just before serving, drizzle the skewers generously with the hot honey glaze. Optionally, garnish with a light drizzle of olive oil, sprinkle of oregano, or a touch of lemon zest to add brightness and aroma.
