Cod Strips

- 2 tbsp Olive oil (for searing)
- 3 tbsp Unsalted butter
- 3–4 cloves Garlic, minced
- Zest of 1 lime
- ½ lime juice, freshly squeezed
Sweet Chili Lime Sauce
- 3 tbsp Sweet chili sauce (Asian-style bottled sauce)
- 1 tbsp Lime juice, freshly squeezed
- 1 tsp Lime zest, finely grated
- 1 tsp Honey (optional, for balance)
- 1 pinch Salt, to taste

- Fresh cilantro or parsley, chopped
Instructions
- Season the cod strips: Pat the cod strips dry with paper towels and season both sides generously with salt and pepper to enhance the natural flavors.
- Sear the cod: Heat olive oil in a skillet over medium heat. Lay the cod strips in a single layer and cook for 2–3 minutes on each side until they turn lightly golden and opaque. Remove from skillet and set aside.
- Prepare garlic butter sauce: Lower the heat to medium-low. Add butter to the same skillet and allow it to melt. Stir in the minced garlic, lime zest, and half a lime’s juice. Cook for about one minute until the garlic is fragrant but not browned.
- Coat the cod strips: Return the cod strips to the skillet. Spoon the garlic butter sauce continuously over them and warm gently for another minute to infuse flavors evenly.
- Make the sweet chili lime sauce: In a small bowl, whisk together sweet chili sauce, one tablespoon freshly squeezed lime juice, finely grated lime zest, honey (if using), and a pinch of salt until smooth.
- Serve: Arrange the cod strips on a plate. Drizzle the sweet chili lime sauce over the top or serve it on the side for dipping. Garnish with freshly chopped cilantro or parsley to add brightness and color.
