Instructions

  1. Prepare the potatoes: Place the peeled and cubed Yukon Gold potatoes in a 6-quart saucepan and cover with enough water. Bring the water to a boil, then reduce the heat to a simmer. Cook the potatoes uncovered for 10 to 15 minutes, or until tender when pierced with a toothpick or paring knife.
  2. Mash the potatoes: Drain the cooked potatoes thoroughly. Mash the potatoes while gradually adding the butter and softened cream cheese until fully incorporated and smooth.
  3. Combine remaining ingredients: Stir in the sour cream, heavy whipping cream, minced fresh chives, parsley, garlic, thyme, salt, and pepper until evenly mixed.
  4. Slow-cook to meld flavors: Grease a 3- to 4-quart slow cooker and transfer the mashed potato mixture into it. Cook on low heat for two to three hours to allow the flavors to thoroughly meld and the potatoes to develop a rich, mellow taste. The potatoes can be served immediately after mashing but slow cooking enhances the flavor.

  • You can use Russet potatoes as a substitute, but Yukon Gold offers a creamier texture.
