Scale
Yogurt Base
- 2 ½ cups plain Greek yogurt
- 4 tbsp honey
- 1 tsp vanilla extract
Toppings
- 1 cup blueberries (fresh or frozen)
- 1 cup raspberries (fresh or frozen)
- ½ cup walnuts, chopped
Instructions
- Mix Yogurt Base: In a large bowl, combine the Greek yogurt, honey, and vanilla extract thoroughly using a silicone spatula until smooth and well blended.
- Prepare Baking Sheet: Line a baking sheet with parchment paper to prevent sticking and make removal easier.
- Spread Yogurt: Pour the yogurt mixture onto the parchment-lined baking sheet and spread it out evenly with the spatula into a thin layer.
- Add Toppings: Evenly scatter the blueberries, raspberries, and chopped walnuts over the surface of the yogurt layer.
- Freeze: Place the baking sheet in the freezer and freeze for about 3 hours or until the yogurt is completely firm.
- Cut Bark: Remove the frozen yogurt bark from the freezer and, using a sharp knife, quickly cut it into rectangles or triangles to prevent melting. Be as swift as possible for the best texture.
- Store: Transfer the pieces into airtight containers while still frozen and keep them in the freezer until ready to serve.
Notes
- Use parchment paper to prevent the yogurt from sticking to the baking sheet, making it easy to remove.
- Handle the bark quickly during cutting to minimize melting and maintain texture.
- You can customize toppings with other fruits or nuts based on preference.
- Store properly in airtight containers in the freezer for up to 2 weeks for best flavor and texture.
