Beef Patties

  • 1 pound 80/20 ground beef
  • 2 tbsp burger seasoning
  • Salt and pepper, to taste
  • 4 slices American cheese
  • 4 slices mozzarella cheese

Onions

  • 1 large yellow onion
  • Salt and pepper, to taste

Burger Sauce

  • 1 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp relish
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper

Instructions

  1. Prepare the Onions: Slice the yellow onion into 4 large rings, keeping each ring intact. Season both sides with salt and pepper.
  2. Cook and Steam Onions: Heat a griddle over medium-high heat. Place the onion slices on the griddle and cook for 4-5 minutes per side until they develop a slight char. Add a splash of water and cover to steam for 3-4 minutes until onions become soft.
  3. Make Burger Sauce: In a bowl, combine mayo, ketchup, yellow mustard, apple cider vinegar, relish, smoked paprika, garlic powder, and black pepper. Stir thoroughly until smooth and well mixed.
  4. Form and Cook Patties: Divide the ground beef into 4 quarter-pound balls. Using a burger press or spatula, smash each ball into a thin patty. Season with burger seasoning. Cook on the griddle for 3-4 minutes on one side, then flip.
  5. Add American Cheese to Patties: Immediately after flipping the patties, place a slice of American cheese on each side of the patties to melt evenly while cooking.
  6. Toast Mozzarella Cheese: When the onions are soft, place 4 slices of mozzarella cheese directly on the griddle over medium heat. Once the cheese has melted and turned golden brown, place each onion ring on a slice of the toasted mozzarella. Remove from heat.
  7. Assemble the Burger: Place a mozzarella-topped onion ring as the base. Spread burger sauce, add a cheeseburger patty, then more sauce and top with another mozzarella-topped onion ring. Serve immediately.
