Chicken Mixture

- 1 1/2 lbs boneless skinless chicken thighs or breasts, sliced into very thin strips
- 3 tablespoons taco seasoning, divided

- 2 large bell peppers, red and green, sliced into thin strips

Instructions
- Prepare Chicken: Combine the sliced chicken, 1 tablespoon of olive oil, and 2 tablespoons of taco seasoning in a mixing bowl. Toss everything together well until the chicken strips are thoroughly coated with the seasoning and oil.
- Cook Chicken: Heat the remaining 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add the seasoned chicken strips and stir constantly for about 3 to 4 minutes until cooked through. Transfer the chicken to a plate and set aside near the stove.
- Sauté Vegetables: In the same skillet, add the sliced onion and bell peppers. Cook, tossing gently with tongs occasionally, until the vegetables are slightly crisp but tender, about 4 to 5 minutes. Sprinkle the remaining 1 tablespoon of taco seasoning over the vegetables and toss to coat evenly.
- Combine and Serve: Return the cooked chicken to the skillet with the vegetables and stir to combine all ingredients well. Serve immediately with warm tortillas. Squeeze fresh lime juice over the fajita mixture and top with sour cream and/or guacamole as desired for added flavor.
