This Easy Bok Choy & Mushroom Stir-Fry is a quick and healthy 20-minute meal featuring tender bok choy, savory mushrooms, and a flavorful garlic-ginger soy sauce. Perfect for a weeknight dinner, it pairs wonderfully with rice or noodles for a satisfying vegetarian dish.

Ingredients

Scale

Vegetables

  • 4 cups bok choy, chopped
  • 8 ounces mushrooms, sliced (shiitake or button)
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced

Sauce and Seasoning

  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper to taste

Cooking Oils

  • 2 tablespoons vegetable oil

Serving

  • Cooked rice or noodles for serving

Instructions

  1. Heat oil: Heat the vegetable oil in a large skillet or wok over medium-high heat to prepare the pan for sautéing the aromatics and vegetables.
  2. Sauté aromatics: Add the minced garlic and ginger to the hot oil and sauté for about 30 seconds until fragrant, which releases their flavors into the oil.
  3. Cook mushrooms and bell pepper: Add the sliced mushrooms and red bell pepper to the skillet and cook for 3 to 4 minutes until the mushrooms become tender and the peppers slightly soften.
  4. Add bok choy: Stir in the chopped bok choy and cook for another 2 to 3 minutes until it wilts but still retains some crispness.
  5. Add sauces: Pour in the soy sauce and sesame oil, stirring everything to combine and evenly coat the vegetables with the flavorful sauce.
  6. Thicken sauce: Add the cornstarch mixture to the pan and stir continuously until the sauce thickens slightly, helping it to cling to the vegetables.
  7. Season: Taste and season with salt and pepper as needed to enhance the overall flavor.
  8. Serve: Serve the stir-fry hot over cooked rice or noodles for a complete and satisfying meal.

Notes

  • Feel free to substitute other mushrooms like cremini or oyster mushrooms.
  • Add protein such as tofu, tempeh, or chicken for a heartier dish.
  • Stir-fry over high heat for best texture and flavor.
  • To make it spicier, add a dash of chili flakes or fresh sliced chili peppers.
