Instructions

  1. Heat the oil and cook mushrooms: In a large pot over medium heat, warm 2 tablespoons of vegetable or avocado oil. Add the sliced shiitake mushrooms and cook, stirring occasionally, for 5 to 8 minutes until the mushrooms soften and release their flavor.
  2. Add seasonings and broth: Stir in 2 tablespoons of tamari or soy sauce, then add 6 cups of vegetable broth along with the grated garlic, grated fresh ginger, julienned carrot, frozen vegetable dumplings, and half of the sliced scallions. Mix well.
  3. Simmer the soup: Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 4 minutes or until the dumplings are fully heated through.
  4. Incorporate spinach and acidic ingredients: Remove the pot from heat and stir in 3 cups fresh spinach, 1 tablespoon rice vinegar, and 1 tablespoon fresh lime juice. Stir gently until the spinach wilts and combines with the broth. Taste and adjust seasoning if needed.
