Date Snickers Recipe

  • Author: Simon
  • Total Time: 15 minutes
  • Yield: 9 pieces 1x
  • Diet: Gluten Free

Description

This Date Snickers recipe transforms naturally sweet and chewy Medjool dates into delightful bite-sized treats filled with creamy peanut butter, crunchy chopped peanuts, and a decadent dark chocolate drizzle. Perfect for a healthy snack or a quick dessert, these no-bake snacks blend rich flavors and textures reminiscent of classic Snickers bars, but with natural ingredients and minimal fuss.

Ingredients

Scale

Dates

  • 9 squishy Medjool dates

Filling

  • 3 tablespoons peanut butter (or other nut butter)
  • 2 tablespoons chopped peanuts

Topping

  • ¼ cup dark chocolate chips
  • Flaky sea salt (optional topping)

Instructions

  1. Prepare Dates: Use your fingers or a knife to carefully split each Medjool date in half lengthwise and remove the pits. Arrange the date halves cut-side up on a parchment-lined plate to keep them clean and ready for filling.
  2. Add Peanut Butter Filling: Place approximately half a teaspoon of peanut butter into the center cavity of each date half, then generously sprinkle chopped peanuts over the peanut butter to add texture and crunch to every bite.
  3. Melt Chocolate: In a double boiler setup, bring an inch of water in a small saucepan to boil. Place a heat-safe bowl securely over the pan and add the dark chocolate chips. Stir gently until the steam melts the chocolate into a smooth, glossy liquid. Alternatively, melt the chocolate in short bursts in a microwave, stirring frequently to prevent burning.
  4. Drizzle Chocolate and Garnish: Using a spoon, drizzle the melted chocolate over the top of each stuffed date half. Aim to coat only the top surface since the date beneath already provides sweetness. While the chocolate is still warm and shiny, sprinkle a pinch of flaky sea salt on each piece to enhance flavor and balance the sweetness.

Notes

  • Medjool dates are preferred for their soft texture and natural sweetness.
  • Nut butter alternatives like almond or cashew butter work well for those with peanut allergies.
  • If you don’t have a double boiler, melt chocolate carefully in the microwave in short intervals.
  • Flaky sea salt is optional but highly recommended to create a sweet-salty contrast.
  • Store prepared Date Snickers in an airtight container in the refrigerator to keep chocolate firm and dates fresh.
