  • 1 cup peanuts, roughly chopped
  • 12 sleeves Ritz crackers (additional for topping as needed)

Instructions

  1. Prepare baking sheet: Line a cookie sheet with parchment paper and arrange 2-3 sleeves of Ritz crackers in a single layer, making sure they don’t overlap. This will serve as the base for the cookies.
  2. Cook caramel mixture: In a small saucepan over medium heat, combine the sweetened condensed milk, butter, and brown sugar. Cook while stirring frequently for about 7-8 minutes, until the mixture is glossy and starting to thicken.
  3. Add remaining ingredients: Reduce heat to low, then whisk in the milk, vanilla extract, and roughly chopped peanuts until the mixture is smooth and fully combined. Continue cooking for an additional 2 minutes until it’s thick enough to coat the back of a spoon, then remove the pan from heat.
  4. Top crackers: Using a cookie scoop or spoon, evenly distribute dollops of the caramel-peanut mixture on top of each Ritz cracker on the parchment-lined cookie sheet.
