Scale
Main Ingredients
- 1 pound lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound russet potatoes, peeled and diced into 1/2-inch cubes
- 2 cups beef broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 can (10.5 ounces) condensed cheddar cheese soup
- 1 cup milk
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded sharp cheddar cheese
- 1/2 cup heavy cream
- Chopped fresh parsley or chives, for garnish
Instructions
- Cook the ground beef: In a large skillet over medium heat, cook the lean ground beef until browned and fully cooked, breaking it up with a spatula as it cooks. Drain any excess fat before using.
- Transfer beef to slow cooker: Place the cooked ground beef into a 6-quart slow cooker as the base for your soup.
- Add vegetables and liquids: Add the diced onion, minced garlic, peeled and diced potatoes, beef broth, undrained diced tomatoes, condensed cheddar cheese soup, milk, dried basil, dried oregano, salt, and black pepper to the slow cooker. Stir everything together until combined.
- Cook slowly: Cover the slow cooker and cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours, until the potatoes are tender and the flavors meld.
- Finish the soup: About 30 minutes before serving, stir in the shredded sharp cheddar cheese and heavy cream. Cover and continue cooking until the cheese melts and the soup is thoroughly heated.
- Garnish and serve: Ladle the soup into bowls and garnish with chopped fresh parsley or chives if desired. Serve warm for a comforting meal.
Notes
- For a thicker soup, you can mash some of the potatoes before adding cheese and cream.
- Use low-fat milk and reduced-fat cheese to reduce calories and fat content.
- This soup can be made a day ahead; flavors deepen after refrigerating overnight.
- Feel free to substitute fresh herbs if available for a brighter flavor.
- Make it spicier by adding a pinch of cayenne pepper or red pepper flakes.
