Instructions
- Toast Panko Crumbs: Optional – Add the Panko bread crumbs to a small dry skillet and cook over medium heat, stirring constantly until fragrant and lightly toasted. Remove from heat and let cool.
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Place a metal rack on a large rimmed baking sheet if available, otherwise spray the baking sheet generously with cooking spray to prevent sticking.
- Prepare Wet and Dry Mixtures: Beat the eggs in a shallow bowl and set aside. In a separate shallow dish, mix together the flour, ½ teaspoon salt, and ½ teaspoon black pepper. In a third shallow dish, combine the toasted Panko crumbs, cornflake crumbs, shredded Parmesan, dried parsley, garlic powder, and remaining ½ teaspoon salt.
