Instructions

  1. Prepare the Mushrooms: Clean the mushrooms thoroughly and lightly sprinkle them with salt. Set them aside to absorb the seasoning.
  2. Set Up Breading Station: Prepare three separate containers or mixing bowls: Container 1 holds the flour combined with oregano, garlic powder, cayenne pepper, black pepper, salt, red chili flakes, basil, and thyme. Container 2 contains the eggs whisked together with ⅛ cup milk. Container 3 has the bread crumbs, optionally seasoned with additional salt, pepper, garlic powder, and red chili flakes.
  3. Coat the Mushrooms: Dip the mushrooms first into the seasoned flour mixture. Cover the container with its lid and shake until the mushrooms are well coated. Next, transfer the mushrooms into the egg mixture, cover, and shake again to coat evenly. Finally, toss the mushrooms into the breadcrumb container, cover, and shake to achieve a thorough coating. Place the coated mushrooms on a clean plate and repeat the process with all mushrooms.
  4. Deep-Fry the Mushrooms: Heat 1–2 inches of vegetable oil in a pan to 350°F (use a candy thermometer to monitor). Fry the mushrooms in small batches of about six at a time, cooking each batch for 6–10 minutes while flipping halfway through to ensure even browning. Allow the oil temperature to return to 350°F between batches.
  5. Drain and Serve: Once fried to golden brown, remove the mushrooms from oil and place them on a paper towel-lined plate to drain excess oil. Serve them hot, paired with ranch dressing or your preferred dipping sauce.
