- 4 cups beef broth
- 1 cup heavy cream

- 8–10 sheets of lasagna noodles, broken into pieces

- 1 tbsp fresh parsley, finely minced
- 1 tbsp fresh oregano, finely minced
- 1 tbsp fresh basil, finely minced
Cheese Mixture
- 3/4 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
Seasonings
- Salt and pepper to taste
- Italian seasoning to taste
- Olive oil for sautéing
Instructions
- Prepare Aromatics: Dice the onion and mince the garlic cloves, setting them aside for later use to build flavor in the soup.
- Cook Sausage: Remove the casings from the Italian sausages. Heat a large pot with some olive oil over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned and cooked through. Remove the sausage from the pot and set aside.
- Sauté Onions and Garlic: In the same pot, add the diced onions and sauté for a few minutes until softened. Then add the minced garlic and a pinch of red pepper flakes and cook for another 1-2 minutes until fragrant.
- Add Tomato Paste and Tomatoes: Stir in the tomato paste and cook for a couple of minutes to deepen the flavor. Then add the canned tomatoes, breaking them apart with a spoon as they start to bubble, cooking until the mixture is mostly smooth.
- Add Broth and Bring to Boil: Pour in the beef broth and bring the soup to a boil. At this stage, season with salt, pepper, and Italian seasoning to your taste.
- Add Lasagna Noodles: Break the lasagna sheets into pieces and add them to the boiling soup. Stir every couple of minutes to prevent the noodles from sticking to the pot.
- Add Cream: When the noodles are about three-quarters cooked, stir in the heavy cream. Mix well and return the soup to a gentle simmer.
- Combine Sausage and Herbs: Add the cooked sausage back into the pot. Finely mince fresh parsley, oregano, and basil, then add them in. Stir to combine and reduce heat to low. Adjust seasoning as needed with a final taste test.
- Make Cheese Mixture: In a small bowl, combine ricotta, shredded mozzarella, and grated Parmesan cheese. You may season this mix lightly with salt, pepper, or Italian herbs if desired.
- Serve: Ladle the soup into bowls and top each serving generously with the cheese mixture and some additional fresh basil if available. Serve hot and enjoy the rich, comforting flavors of lasagna in soup form.

- For a milder version, use sweet Italian sausage instead of hot.
- Gluten-free lasagna noodles can be used to make this gluten-free-friendly.
- The soup thickens as it cools, so serve immediately or add a little water/broth when reheating.
