Seasonings

  • 1/4 teaspoon kosher salt
  • 1/23/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 275°F (135°C) and line a half sheet pan with a silicone baking mat or two smaller pans if you don’t have a half sheet pan.
  2. Combine Dry Ingredients: In a large bowl, mix together the Corn Chex, Cheerios, Wheat Chex, pretzels, mini saltine crackers, and unsalted whole cashews.
  3. Melt Butter: Melt the butter in a microwave-safe bowl until fully liquefied.
  4. Add Honey, Vanilla, and Salt: Stir the honey, vanilla extract, and kosher salt into the melted butter until well combined.
  5. Coat Snack Mix: Pour the honey butter mixture over the cereal and nut mix, tossing well to evenly coat all pieces.
  6. Spread on Baking Sheet: Transfer the coated mixture onto the prepared baking sheet(s) and spread it out in an even layer.
  7. Bake and Stir: Bake the mix for 15 minutes, then remove and stir to redistribute for even baking.
  8. Bake Again and Stir: Return the mix to the oven and bake for another 15 minutes, then stir again.
  9. Final Baking Before Coating: Bake for an additional 10 minutes and stir once more.
  10. Mix Cinnamon Sugar: In a small bowl, combine the granulated sugar with the ground cinnamon.
  11. Coat with Cinnamon Sugar: Sprinkle the cinnamon sugar mixture evenly over the snack mix and toss to coat each piece thoroughly.
  12. Final Bake: Bake the cinnamon sugar-coated snack mix for 10 more minutes to set the coating.
  13. Cool: Remove the mixture from the oven and allow it to cool completely on the baking sheet.
  14. Store: Once cooled, store the Chex mix in an airtight container to maintain its freshness.

Notes

  • Use unsalted butter and nuts to control the salt level in the snack mix.
  • Adjust the amount of granulated sugar in the cinnamon sugar coating to your preferred sweetness level.
  • If you don’t have a silicone baking mat, parchment paper works as a good alternative.
  • This snack mix can be stored at room temperature in an airtight container for up to two weeks.
  • Stirring during baking ensures even toasting and prevents burning.
