These Chicken Fajita Sliders are a delicious and spicy twist on the classic slider, combining tender shredded chicken with sautéed peppers and onions, melty pepper jack cheese, and a flavorful homemade chili salt seasoning. Chicken and Seasoning
- 2–3 chicken breasts, cooked and shredded (rotisserie chicken works great)
- 1 4 oz can green chiles
- 1/8 cup sea salt
- 1/8 cup chili powder
- 1/8 tsp cayenne powder
- Dash paprika
- Dash pepper
Vegetables
- 1 small green pepper, sliced
- 1 small onion, sliced
- 1 small red pepper, sliced
Other
- 2 tablespoons oil (preferably vegetable or olive oil)
- 9 slices pepper jack cheese
- 1 12-count package slider buns
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the sliders later.
- Sauté Vegetables: Heat oil in a skillet over medium heat. Add sliced onion, green pepper, and red pepper. Cook until the vegetables are tender and slightly caramelized, then remove from heat and set aside.
- Make Chili Salt: In a small bowl, combine sea salt, chili powder, cayenne powder, paprika, and pepper. Stir well until evenly mixed to create a spicy seasoning blend.
- Prepare Chicken Mixture: In the skillet or another pan, add shredded chicken, about 2 tablespoons of the chili salt (more or less depending on your heat preference), and the can of green chiles. Stir well and heat through until warmed evenly. Remove from heat.
- Assemble Sliders: Place the bottom halves of the slider buns in an 11×7-inch baking pan (use a larger pan if needed). Spread the chicken mixture evenly over the buns. Next, layer the sautéed pepper and onion mixture on top of the chicken, then place slices of pepper jack cheese over the vegetables.
- Top and Bake: Cover the sliders with the top halves of the buns. Cover the pan with aluminum foil and bake in the preheated oven for 15-20 minutes, or until the cheese is melted and the sliders are heated through.
Notes
- You can use rotisserie chicken for convenience and to add extra flavor.
- Adjust the amount of chili salt used in the chicken mixture based on your heat preference.
- If you don’t have an 11×7 inch pan, any similar or larger baking dish will work to arrange the sliders comfortably.
- For a milder version, reduce or omit the cayenne powder in the chili salt.
- These sliders warm up well and make great leftovers for next-day meals.
