  • Kosher salt and freshly cracked black pepper, to taste
  • 1 cup shredded cheddar or American cheese
  • 1/4 cup finely chopped dill pickles

Spring Rolls

  • 12 spring roll wrappers (thawed if frozen)
  • 2 tablespoons flour
  • 3 tablespoons water
  • Oil for frying (or oil spray for air frying)

Dipping Sauces

  • Mix of ketchup and mayonnaise
  • Or sweet chili sauce and sour cream

Instructions

  1. Cook Filling: Heat a skillet over medium-high heat. Add ground beef and finely diced onion, cooking until browned with crispy edges, about 5 to 7 minutes. Drain all grease thoroughly to avoid sogginess.
  2. Season Filling: Stir in ketchup, mustard, Worcestershire sauce, garlic powder, onion powder, and salt and pepper to taste. Allow filling to cool for 5 minutes to prevent melting the wrappers during assembly. Then mix in shredded cheese and chopped dill pickles evenly.
  3. Prepare Wrappers: Keep spring roll wrappers covered under a damp towel to prevent drying out. Prepare the sealing paste by mixing 2 tablespoons of flour with 3 tablespoons of water until smooth.
  4. Assemble Spring Rolls: Place 2 tablespoons of the cooled filling in the center of each wrapper. Fold the sides inward, then roll tightly like a burrito. Seal the edges with the flour paste, ensuring no filling escapes. Avoid overfilling to maintain crispness and ease of rolling.
  5. Fry Spring Rolls: Heat about 2 inches of oil in a deep skillet or fryer to 350°F (175°C). Fry 3 to 4 rolls at a time for 3 to 4 minutes, turning occasionally, until golden brown and crispy. Drain on paper towels to remove excess oil.
  6. Air Fry Option: Alternatively, spritz assembled rolls lightly with oil and air-fry at 390°F (200°C) for 10 to 12 minutes, flipping halfway through, until golden and cooked through.
  7. Serve and Store: Serve hot with dipping sauces such as mixed ketchup and mayonnaise or sweet chili sauce with sour cream. Uncooked spring rolls can be frozen on a parchment-lined tray until solid, then transferred to a zip-top bag. Cook from frozen by adding 1 to 2 minutes to the frying or air frying time.
