Description
A refreshing and crunchy broccoli salad featuring sweet grapes, tangy balsamic dressing, and crunchy pecans. This no-cook salad is perfect as a healthy side dish or light snack, combining fresh vegetables and fruits with a creamy, slightly sweet dressing for a well-balanced flavor.
Ingredients
Scale
Salad Dressing
- 1/2 cup mayonnaise
- 2 tablespoons balsamic vinegar (traditional or white balsamic)
- 2 tablespoons sugar
Salad
- 1 pound fresh broccoli, sliced into small 1/2″ florets (about 4 cups)
- 2 cups red or green grapes, halved
- 1/3 cup finely diced red onion
- 1/2 cup chopped pecans
Instructions
- Make the dressing: In a large mixing bowl, combine the mayonnaise, balsamic vinegar, and sugar. Whisk or stir until the sugar is dissolved and the dressing is smooth.
- Mix the salad ingredients: Add the sliced broccoli florets, halved grapes, and finely diced red onion to the bowl with the dressing. Toss well to ensure all pieces are evenly coated with the dressing.
- Add pecans and chill: Stir in the chopped pecans, reserving a few for garnish on top. Cover and refrigerate the salad until ready to serve, allowing the flavors to meld and the broccoli to soften slightly, about 1 hour. Stir again just before serving and sprinkle the reserved pecans over the top. Enjoy!
Notes
- This salad is best served chilled and is a great make-ahead dish for potlucks or family gatherings.
- You can substitute pecans with walnuts or almonds if preferred.
- For a healthier option, use a light or low-fat mayonnaise.
- Red or green grapes both work well; choose seedless for comfort.
- Adjust the sweetness by varying the amount of sugar according to taste.
- Add a pinch of salt and freshly ground black pepper if desired to enhance flavor.
