Description

This Baked Mahi Mahi recipe features tender, flaky fillets seasoned with a flavorful blend of herbs and spices, baked on a bed of fresh lemon slices for a zesty, aromatic finish. It’s a simple, healthy dish that’s perfect for a quick weeknight dinner or an elegant meal.

Ingredients

Scale

Fish and Seasoning

  • 1 pound Mahi Mahi fillets
  • 2 tablespoons butter, melted
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon dried thyme
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • 2 tablespoons finely chopped parsley

Lemon

  • 2 lemons, sliced into thin rounds

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to get it ready for baking the fish.
  2. Prepare Baking Sheet: Line a rimmed baking sheet with aluminum foil for easy cleanup. Arrange the lemon slices evenly on the sheet; this will create a flavorful bed for the Mahi Mahi.
  3. Position the Fish: Place the Mahi Mahi fillets on top of the lemon slices. Brush both sides of the fish with the melted butter to add richness and help the seasoning adhere.
  4. Season the Fish: In a small bowl, combine paprika, garlic powder, dried oregano, sea salt, dried thyme, red pepper flakes, onion powder, and ground black pepper. Stir well, then sprinkle this seasoning mixture evenly over both sides of the fish.
  5. Bake and Broil: Bake the seasoned fish in the preheated oven for 10 minutes, then switch the oven to broil on high and broil the fish for an additional 1 ½ minutes to develop a slight crisp and enhance the flavors.
  6. Garnish and Serve: Remove the fish from the oven and sprinkle the finely chopped parsley over the top. Serve the baked Mahi Mahi immediately while hot and fresh.

Notes

  • Make sure to slice lemons thinly to ensure they cook evenly and impart maximum flavor.
  • Broiling at the end adds a nice golden crust without overcooking the fish.
  • If you prefer a milder spice, reduce or omit the red pepper flakes.
  • This recipe pairs beautifully with steamed vegetables or a light salad for a complete meal.
