Instructions
- Prepare Apples: Core, peel, and slice the apples until you have 2 pounds of sliced apples ready for cooking.
- Cook Apples: Place the sliced apples and 1 cup of water in a large, heavy-bottomed pot or Dutch oven. Cover and bring to a boil, then cook for 8 to 10 minutes, stirring frequently, until apples are tender.
- Drain Excess Water: After cooking, you should have about 4½ cups of cooked apples. Drain any excess water if necessary since most will have evaporated.
- Add Sugar and Butter: Return cooked apples to pot if drained. Add 5 cups granulated sugar and ½ teaspoon butter. Stir constantly and bring to a full rolling boil over high heat.
- Incorporate Pectin and Boil: Stir in the 3-ounce pouch of liquid pectin and continue to boil vigorously for another 1 minute while stirring constantly.
- Finish Jam: Remove from heat and skim off any foam with a spoon. Gently stir in 2 ½ teaspoons apple pie spice, taking care not to break the cooked apple slices.
- Jar the Jam: Ladle the hot mixture into 6 or 7 sterilized half-pint canning jars, leaving ¼-inch headspace. Remove air bubbles, wipe rims clean, and seal with sterilized lids and bands fingertip tight.
- Process Jars: Use a water bath canning method to process jars for 10 minutes. Afterward, turn off heat and leave jars in hot water for an additional 5 minutes before removing to cool completely.
- Cool and Serve: Let jars cool completely; the jam will firm as it cools. Enjoy on buttered toast or warm it slightly to spoon over vanilla ice cream.
