Instructions

  1. Prepare the onion and garlic: In a large bowl, combine the thinly sliced red onion and minced garlic with the red wine vinegar and lemon juice. Toss everything together and let it sit for about 10 minutes. This citrus bath helps mellow the pungent flavors of the onion and garlic.
  2. Add the beans and vegetables: To the bowl, add the drained cannellini beans, Roma tomato wedges, and chopped fresh parsley. Gently fold them in to mix.
  3. Season and dress the salad: Sprinkle in 2 teaspoons of sumac, along with kosher salt and black pepper to taste. Drizzle the extra virgin olive oil over the salad and toss everything until evenly combined.
